• 2 pounds fresh yellow squash, thinly sliced
• 1 large onion, chopped
• 1 (16-ounce) can of low-sodium chicken broth
• 1 (8-ounce) package of fat free sour cream

In a saucepan, simmer squash and onions in the broth until very tender. Chill. Just before serving, add sour cream and very little salt and pepper. Serve chilled.
